Denise's Stuffed Peppers


Ingredients

* 5-6 Tablespoons olive oil (use more if needed)
* 3 large onions (sliced)
* 1 small fresh bunch of broccoli (optional)
* 1-12 ounce can sliced mushrooms
* 1 2/3 cups cooked rice
* 6 large green bell peppers
* 2-29 ounce cans tomato sauce
* 8 ounces of Monterey Jack cheese (grated)
* 1 1/2 teaspoons salt and....
* 1 teaspoon of salt
* 2 Tablespoons garlic powder and....
* 1 Tablespoon of garlic powder
* 1 Tablespoon of onion powder
* 3/4 cup water

Instructions

* Wash peppers. Cut tops off and clean out seeds. Arrange the peppers in a pot so they fit snugly
* Saute onions in the olive oil until soft
* Add broccoli, 1 1/2 teaspoons salt, pepper, 2 Tablespoons garlic powder and onion powder
* Cook until broccoli is semi-soft, add mushrooms, and cook for 10 minutes
* In a large bowl, add rice, cheese, 1 Tablespoon garlic powder, and one teapsoon of salt
* Mix well until cheese melts into rice
* Add the onion, mushroom, and broccoli mixture to the rice mixture and stir well
* Stuff peppers (pack in)
* Add tomato sauce (almost to the top of the peppers)
* Add 3/4 cup of water
* Top each pepper with one spoon of tomato sauce
* Bring to a boil, then lower heat and simmer for 45 minutes or until peppers are soft
* Serves 6
